You'd have find the mass of the Rock from its dimensions and density of the rock that forms it. Keep in mind it should be a rock type that commonly bears gold. So 2200' x miles 2 = 12,000,000,000 m 3. Times the density of granite a common gold bearing rock = 13 kg.
Yeah but casterly rock in the show is just a regular ass castle. They couldn't really do the version from the books, kinda like the iron throne itself. The castle that the unsullied take from Jaime and Bronn in season 6 is the canonical casterly rock, and there's no way in 7 hells that thing is taller than the wall.
That being said, Casterly Rock is a huge mountain, the Grasberg Mine, the largest gold mine in the world, is about 27,000 acres and produces about 30 tons of gold per year, plus copper and silver. The Rock of Gibraltar is three miles long, seventenths of a mile wide, and almost 1400 feet high at its highest point. (That's twice as tall as the Wall, for those who want a Westerosi reference). There is no longer any mining done in Casterly rock. The remaining gold veins are kept as decoration/bragging. The Lannisters still have active mines, it's mentioned there is mines around the Golden Tooth etc. Even if the gold had run out, they still are a major house with vast lands who pay taxes to them.

In the Westerlands: Casterly Rock has a unique modifier. The Golden Tooth, Castle Pendric, and Nunn's Deep all have mining settlement modifiers which give lots of gold. Casterly Rock has been occupied long enough that it's no longer viable as a mine. Frankly Casterly Rock's mines probably went dry long before even Aegon's Conquest. I have a personal theory that there is a store of gold the Lannisters keep locked as a wellspring of money they occasionally tap.
With that said, glacial gold deposits are still present here just as in all of the other states in the Northeast, so there is definitely some gold to be found.
