There is no longer any mining done in Casterly rock. The remaining gold veins are kept as decoration/bragging. The Lannisters still have active mines, it's mentioned there is mines around the Golden Tooth etc. Even if the gold had run out, they still are a major house with vast lands who pay taxes to them.
